Taco night. Always a favourite and perfect for any occasion. These Cajun shrimp tacos will definitely be a hit. Served with a Mexican fried rice and fresh guacamole. This rice with cheese mixed in elevates my love for tacos to an obsession.
Need I say more? Didn’t think so. Enjoy the recipe and have a taco feast!
- 1 cup uncooked Uncle Ben's Natural Select Mexican style rice
- 2 tbsp olive oil
- 1 small onion diced
- 1 jalepeno diced, seeds removed
- 1 lb shrimp
- 1 tbsp Cajun seasoning
- 1 avocado
- 1 vine tomato diced
- 1 1/2 tsp lemon juice
- 1/2 tsp salt
- whole grain tortillas
- grated cheddar and Monterey jack
- sour cream
Prepare rice per package instructions.
While rice is cooking, heat a large skillet over medium heat. Add 1 tbsp of the olive oil, onions and jalepeno. Cook for about 10 minutes, stirring occasionally.
Add prepared rice to skillet, mixing it in with the vegetables. Cook for 5 minutes so the rice at the bottom gets a little crispy.
Transfer rice to a serving bowl and set aside.
In a mixing bowl add shrimp, 1 tbsp of olive oil and Cajun seasoning. Mix together so shrimp is evenly coated.
Using the same skillet, increase heat to medium high. Add shrimp, spread out in a single layer and cook 2-3 minutes, flip each shrimp and cook for an additional 1-2 minutes until pink and opaque.
To prepare the guacamole, in a small bowl mash avocado, add diced tomato, lemon juice and season with salt to taste.
Serve with grated cheese, sour cream (or garlic aioli, yum!) and assemble your Cajun shrimp tacos!
