Cheesy Chorizo Potato Pesto Pizza

Pizza Fridays. A super cheesy, spicy chorizo, crispy potato and pesto pizza Friday. Or any other day. Because all days deserve a rich, flavourful gourmet pizza. But especially on a Friday, after a long week. Enjoy with a cold beer or glass of red wine (or maybe more than one?). Treat yourself and make this delicious Cheesy Chorizo Potato Pesto Pizza recipe!

This is not just your regular old pizza recipe. I used a basil pesto as the base sauce for a beautiful fresh herby flavour. Fresh, spicy chorizo sausages add smokiness and a bold, savoury element. Thinly sliced, crispy potato rounds added on top – yes please! All smothered in wonderfully gooey, melted, stretchy cheese. SO GOOD!

I always recommend making your own pizza dough, and this is my favourite thin crust pizza dough recipe!

Cheesy Chorizo Potato Pesto Pizza
  • 2 small potatoes
  • 1/2 medium onion
  • 2 tsp olive oil
  • 1/2 lb fresh chorizo
  • pesto
  • 1 cup mozzarella or other cheese
  • 1 pizza crust
  • salt to taste
  • black pepper to taste
  1. Preheat the oven to 400 degrees F.

  2. Place potatoes in a pot and cover with water. Place lid on pot and bring to boil.

    Remove lid, add salt, and simmer for 10-15 minutes until potatoes are fork tender.

    Remove potatoes from pot and set aside allowing to cool.

  3. Heat oil in medium sized pan over medium high heat.

    Dice onion and add to pan, cooking until softened, about 5 minutes.

  4. Squeeze chorizo out of casing, adding to the pan with the onions.

    Break apart with spatula, add salt and pepper to taste and cook until browned.

  5. Spread pesto on pizza crust. Add the chorizo and onions. Top with slices of potato and shredded cheese.

    Bake in over for about 15 minutes (or per the directions for the pizza crust you are using) until crust is golden and cheese is bubbling.

  6. I turned the oven to broil for the last minute of cooking to make sure everything was nicely toasted and crispy.
