Easy and Healthy Chicken Parmesan

Chicken parmesan. A classic recipe. One of those crowd pleasing recipes you should always have in your back pocket, ready to make. And really, it’s simple enough that after making it a few times, you might not even need to refer to a recipe any more.

After all, some of the best things in life are the simple ones.

All you’ll need is chicken breast, flour, eggs, breadcrumbs, your favourite tomato sauce and cheese.

After that, just add some seasonings to make sure there’s big flavour in every bite. My favourites are in the recipe below!

Pan frying chicken parmesan

Chicken parmesan is such a delicious comfort food. Crispy, breaded chicken breast smothered in a rich tomato sauce and melted cheese. What’s not to love?

You can easily prepare it any night of the week – we made ours with a kale Caesar salad for a great dinner. And we enjoyed leftovers the next day for lunch!

Easy and Healthy Chicken Parmesan
Servings: 4
  • 1/2 tbsp olive oil
  • 3 cloves garlic
  • 2 cups arrabbiata tomato sauce
  • pinch crushed red pepper flakes to taste
  • 4 chicken breasts
  • 2/3 cup flour
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 2 eggs beaten
  • 2/3 cup panko bread crumbs
  • 1/3 cup parmesan cheese grated
  • 1 tbsp smoked paprika
  • 1 tsp oregano
  • sliced gouda cheese
  1. Preheat oven to 400°F.

  2. Heat a medium sized saucepan over medium heat. Add olive oil and garlic, and cook for about 3 minutes until fragrant.

  3. Add arrabbiata (or tomato) sauce, and a pinch of crushed red pepper flakes. Simmer over low heat while preparing the chicken.

  4. Pour flour onto a plate or large bowl, add salt and pepper, and stir to combine.

    On a second plate mix breadcrumbs, parmesan, smoked paprika and oregano.

  5. Pound chicken breasts with a mallet to flatten.

  6. Dredge chicken breasts in the flour, then dip into egg, and dredge both sides of the chicken in breadcrumbs.

  7. Pour about 1/4 inch of oil into a frying pan, and heat over medium high heat.

    Once hot, place chicken breasts in the pan and fry 2 minutes per side until bread crumbs are golden and crispy.

    Depending on the size of your frying pan you may need to fry the chicken in batches, you want enough space for the full chicken breast to be flat in the pan.

  8. Transfer chicken from frying pan to foil lined baking sheet. Top with tomato sauce then with slices of cheese.

  9. Place in the oven and bake for 8-10 minutes until cheese is melted.
