Sweet chili & sour cream kettle chip chicken bites

Is there anything better than little bites of tender, juicy chicken? Actually, yes, there is. And it’s bites of tender, juicy chicken encrusted in your favourite potato chips!

My current favourite chips are the Miss Vickie’s Sweet Chili & Sour Cream kettle chips. Salty and flavourful with a little bit of heat. They’re addictive. And they make for crazy good chicken bites.

Not to mention, its really easy to make the perfect, crunchy coating when you use chips for the breading. Like, seriously easy.

Kettle chip chicken bites and beer cheese sauce

Chicken bites are the perfect pub style food. Great for dinner, lunch, snacks or as appetizers. Make them and watch that big sports game at home. Enjoy them with a nice, ice cold beer.

Better yet, pair them with a homemade beer cheese sauce. Yup. Dip your chicken and chips into beer and cheese perfection. Don’t worry, you can pretend this is healthy by serving it with some fresh cut veggies. Like I did, with celery and carrots.

For the beer cheese dipping sauce, I just adapted the cheese sauce from my Beer Mac and Cheese recipe. I wanted the sauce to be a little thicker, so I used 1/4 of all the ingredients, except for the beer and cheddar, which I only cut in half.

Kettle Chip Crusted Chicken Bites
  • 2 chicken breasts
  • 2 tbsp flour
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
  • 2 eggs
  • 2 cups crushed potato chips
  1. Preheat oven to 400°F.

  2. Cut the chicken breasts into bite sized pieces, about 1 inch cubes.

  3. Place chicken pieces in a large mixing bowl with the flour, salt, pepper and smoked paprika. Toss until all of the chicken is completely covered.

  4. Crush your favourite type of potato chips, or pulse in a food processor until they become fine crumbs. Transfer the crushed chips to a plate.

  5. In a separate small bowl, whisk the eggs together.

  6. For each piece of chicken, shake off any excess flour, dip into the eggs, then dredge in crushed chips. Place on a baking sheet lined with parchment paper.

  7. Bake in the oven for 15-20 minutes until chicken is cooked through.
