Hi Everyone! Welcome to my first "What We're Cooking this Week" post. I am going to try and make this a regular feature to round up all the delicious meals we cook. Do you ever find yourself asking "What should I make for dinner this week?" If so, hopefully these posts will provide you with some inspiration.
It can take a little bit of work trying to create new recipes, so I definitely don't do it every day. Plus, there are so many great recipes and food blogs out there full of amazing things to try! And trying new recipes might inspire a new one of my own, you never know where a new idea is going to come from. I wanted to share everything we try, and maybe if there is a helpful hint or adjustment we can suggest to make things taste even better!
Laura usually does the majority of our meal planning. Okay, she does all the hard work while I half pay attention and say "yes dear, that sounds great". But ONLY because I know it actually will sound great because she's amazing! Hopefully if I write enough nice things about her she'll be less annoyed when I don't quite hear what she says. Love you!
Anyways, she'll write out all our meals for the week and then also every ingredient we need so we can pick it all up at the grocery store. Typically, we like to plan our dinners so the leftovers can be the next day's lunch. It's no extra effort (or at least very little), you get a home-cooked great tasting meal at work the next day, and save money not buying lunches out. It's perfect!
This week was our first back after a glorious week down south in Punta Cana. Where the food was amazing, so we ate lots. And tropical drinks are fantastic, so we had a few of those too. Point being, I think we tried to keep our meal options fairly healthy this week 🙂

We still had some pierogies in the freezer, so this was perfect for a quick meal on a night we knew we'd both be home late. We added lots of fresh veggies (red & green bell peppers, a jalepeno pepper and a sweet onion). And Laura had picked up a new sriracha lime seasoning at the store, which we tried for the first time (it was delicious!).
Zoodles with Shrimp and Feta

Spiralized zucchini noodles. We used the same sriracha lime seasoning from before on the shrimp. Topped off with crumbled feta and freshly squeezed lemon juice. Amazing fresh flavours in this recipe.
